4 large Flour tortilla — large
1 can Black beans — do not drain, 15 oz
3 tablespoons cilantro — chopped
1 can SW style Corn — 8 oz drained
2 teaspoons chipotle peppers — chopped, 2 teaspoons
1 tablespoon Chili powder – I use homemade
1 tablespoon lime juice
2 cups Cilantro Lime rice — See directions below
Tofu — cubed, extra firm, deepfried with cornstarch
TIP: If you want really firm tofu, freeze it, defrost it, squeeze it.
Additional ingredients you can add
1 each Avocado — sliced
bbq sauce — SW Baby Rays Hawaiian BBQ Sauce is awesome
1 each Tomato — sliced or diced or use Pico
pico de gallo
Mexican style corn, serving
pickled red onions
Cheese — Mexican blend or Queso Oaxaca
Mix chopped cilantro, black beans, corn, chipotle peppers, chili powder and lime juice. Bring to a low simmer.
Cilantro lime rice- Used some leftover rice, add lime juice and cilantro and touch of water. Microwave 30 seconds.
2″ cubes of super firm tofu is rolled in corn starch and deepfried for 3 minutes or until done.
Time to assemble. Microwave the tortillas. Load up with bbq sauce, rice, bean mix, tofu (or other protein) and anything else you choose.
Use any sauce you want. I like Sweet Baby Ray’s Hawaiian with this or any BBQ, Chipotle cream, avocado cream, salsa, thai peanut, chili verde, chili garlic or any salad dreesing.
