Awesome White Chicken Chili –

We have a Chili Competition coming up and last year we took first place in both competitions we entered.  I was somewhat surprised though that 2nd place went to a White Chili.  Not  a big fan of that kind of chili normally.

We decided we enter our usual chili and also a white one.  We needed to come up with a good recipe though.  We researched various recipes on the Internet and ended up combining what we liked best from several recipes into this one.

We think it pretty darn good.  The best Chicken Chili I’ve ever had. Give it a try!

Awesome White Chicken Chili

Serving Size  : 12    Preparation Time :20:00

Amount  Measure       Ingredient — Preparation Method

3        tablespoons  cooking oil
1               each  medium onion — diced
5             cloves  garlic
1/2      teaspoon  salt
2        tablespoons  cumin
1           teaspoon  chili powder
6               each  chicken thigh without skin — cooked and chopped
1                can  diced tomato
2               cans  great northern beans, canned
1                can  green chiles
1/3           cup  fresh cilantro — chopped
1           teaspoon  oregano
1                can  chicken broth — 14oz
1/2           cup  half and half
1                cup  sour cream
1                cup  shredded monterey jack cheese

Saute onions with salt, garlic, cumin and chili powder.

Add chicken, tomato, beans, chiles, oregano, cilantro, chicken broth and half and half.  Mix and simmer for 1 hour.

Add sour cream and mix into chili.  Serve with shredded cheese on top.  Let it cool a bit and serve with cornbread.
