Wild Paw Paw Fruit

We discovered we have a patch of wild Paw Paw fruit trees behind our greenhouse. It’s the only tropical fruit native to the USA. They are quite tasty. They have a custardy, banana like flavor with a hint of mango and coconut. The mango comes out much more as they ripened and the inside goes from a creamy white to an almost orange color. In the images, the trees with the long, droopy leaves are pawpaw trees.
They never became commercially viable as they are thin skinned and have a fairly short shelf life. We picked about 20 pounds worth and are now in the process of preparing the pulp for the freezer. We plan on making pawpaw ice cream today as well. I’ll add a recipe and pic’s later.

Fun Cuisine: Ziploc Omelets

Boil in bag Omelets, aka Ziploc Omlets, looked like a fun thing to try on a holiday morning. A mild controversy exists over the toxicity of the plastic (food grade plastic) and it’s transference to the food do to heat. The way I look at it, we cook in plastic bowls in the microwave all the time, boil in bag vegetables, microwaved meals with plastic and no one questions these practices. Yet, when it comes to this, a whole host of nuts come out of the woodwork that will cite studies that are “inconclusive” as some sort of proof of the dangers of plastic.
Moving on:
Here’s whats involved.
Boiling water
Freezer bags
4 eggs
Omelet fillings.
We made ours with avocado, onion, mushroom, homegrown cherry tomatoes, salt, pepper, basil.
Dump it all in the bag. Get the air out of the bag. Chuck it into the boiling water for 13 minutes for two eggs (longer for four in a bag).
Do not hang the plastic bag over the edge of the pot, it will melt (we know). Our experience with the four egg omelet for two people is that it requires a lot more time in the water. We used a Gallon bag for the 4 egg omelet and would now recommend using a quart bag and making individual 2 egg omelets. I would also avoid the mushrooms next time. They just add water to the omelet.

We have a Chili Competition coming up and last year we took first place in both competitions we entered. I was somewhat surprised though that 2nd place went to a White Chili. Not a big fan of that kind of chili normally.
We decided we enter our usual chili and also a white one. We needed to come up with a good recipe though. We researched various recipes on the Internet and ended up combining what we liked best from several recipes into this one.
We think it pretty darn good. The best Chicken Chili I’ve ever had. Give it a try!

Serving Size : 12 Preparation Time :20:00
Amount Measure Ingredient — Preparation Method

3 tablespoons cooking oil
1 each medium onion — diced
5 cloves garlic
1/2 teaspoon salt
2 tablespoons cumin
1 teaspoon chili powder
6 each chicken thigh without skin — cooked and chopped
1 can diced tomato
2 cans great northern beans, canned
1 can green chiles
1/3 cup fresh cilantro — chopped
1 teaspoon oregano
1 can chicken broth — 14oz
1/2 cup half and half
1 cup sour cream
1 cup shredded monterey jack cheese
Saute onions with salt, garlic, cumin and chili powder.
Add chicken, tomato, beans, chiles, oregano, cilantro, chicken broth and half and half. Mix and simmer for 1 hour.
Add sour cream and mix into chili. Serve with shredded cheese on top. Let it cool a bit and serve with cornbread.
