just got the same cut, took forever removing the membranes and most of the fat, lost about 40% of the total bulk in fat slabs. Wondering if smoking would make the fat melt off? Was it too fatty when you ate it?

I was just wondering what to do with some leftover pork chops other than the obvious fried rice and this sounds good! It's either this or some kind of panini tonight for dinner. I've done lots of chicken and tofu and beef curries in a very similar manner, but with Thai curry pastes rather than curry powder.
