We made this one tonight. I have a new favorite meatball.

Chicken Meatball Stroganoff

Chicken Meatballs – from eatchicken.com (mostly)
1 pound ground chicken
2 each egg
1/2 cup parmesan cheese
1/2 cup bread crumbs
2 cloves garlic — minced
2 teaspoons parsley
2 teaspoons oregano — fresh
1/2 teaspoon salt
2 tablespoons olive oil
Stroganoff
2 cloves garlic — minced
6 ounces tomato sauce
1/2 cup white wine
1 cup fresh mushroom — sliced
1 each bay leaf
3/4 cup fat-free sour cream
salt and pepper

Meatballs: Place ground chicken,egg,1/2 cup Parmesan,bread crumbs, garlic,oregano and 1/2 tsp salt in a medium bowl. Knead mixture together with hand till evenly combined. Form mixture into 2-inch balls. In large skillet,warm olive oil over high heat. Place meatballs in pan and cook until all sides are browned,approximately 8 minutes for each meatball. Remove with slotted spoon,and add to the Stroganoff sauce.

Stroganoff: saute garlic for 1 minute. Add meat and brown for 3 minutes

Add tomato sauce, wine mushrooms and bay leaf. turn off heat and stir in sour cream. Then simmer, covered for 30-45 minutes.

Add salt and pepper to taste.
