What to do with leftover Pork Chops Posted on June 30, 2009July 12, 2009 by Troy Quick Yellow Curry with Pork I had 1+ pork chops leftover from our previous nights adventures. A favorite for leftover meats in our family is is to make a quick Curry. Here’s what we did tonight. Recipe: Pork Chop Yellow Curry Summary: Curry made with leftovers Ingredients 1.25 ea cooked pork chop 3.5 T Yellow Curry powder 1T Cumin Powder 1T Ground Corriander 1t Salt 1t Ground red pepper 1 can peas 1/2 cup carrots – cooked 1 can Coconut milk 1 ea Onion – Diced 6 ea Garlic Cloves minced Instructions Fry the curry powder, cumin, corriander and salt in oil for 2 minutes. Add Onion and Garlic. Cook till soft. Add coconut milk, red pepper, peas and carrots to the Curry. Cook for 5 minutes. Add pork and simmer for 15 minutes. Serve over rice.
