What to do with leftover Pork Chops

Quick Yellow Curry with Pork

I had 1+ pork chops leftover from our previous nights adventures. A favorite for leftover meats in our family is is to make a quick Curry. Here’s what we did tonight.

Recipe: Pork Chop Yellow Curry

Summary: Curry made with leftovers

Ingredients

1.25 ea cooked pork chop
3.5 T Yellow Curry powder
1T Cumin Powder
1T Ground Corriander
1t Salt
1t Ground red pepper
1 can peas
1/2 cup carrots – cooked
1 can Coconut milk 1 ea Onion – Diced
6 ea Garlic Cloves minced

Instructions

Fry the curry powder, cumin, corriander and salt in oil for 2 minutes.
Add Onion and Garlic. Cook till soft.
Add coconut milk, red pepper, peas and carrots to the Curry. Cook for 5 minutes.
Add pork and simmer for 15 minutes.
Serve over rice.

Diet (other): Reduced fat, Reduced carbohydrate

Number of servings (yield): 6

Meal type: dinner

I was just wondering what to do with some leftover pork chops other than the obvious fried rice and this sounds good! It’s either this or some kind of panini tonight for dinner. I’ve done lots of chicken and tofu and beef curries in a very similar manner, but with Thai curry pastes rather than curry powder.
