Quick Yellow Curry with Pork

I had 1+ pork chops leftover from our previous nights adventures.  A favorite for leftover meats in our family is is to make a quick Curry.  Here’s what we did tonight.

Recipe: Pork Chop Yellow Curry

Summary: Curry made with leftovers

Ingredients

  • 1.25 ea cooked pork chop
  • 3.5 T Yellow Curry powder
  • 1T Cumin Powder
  • 1T Ground Corriander
  • 1t Salt
  • 1t Ground red pepper
  • 1 can peas
  • 1/2 cup carrots – cooked
  • 1 can Coconut milk 1 ea Onion – Diced
  • 6 ea Garlic Cloves minced

Instructions

  1. Fry the curry powder, cumin, corriander and salt in oil for 2 minutes.
  2. Add Onion and Garlic. Cook till soft.
  3. Add coconut milk, red pepper, peas and carrots to the Curry. Cook for 5 minutes.
  4. Add pork and simmer for 15 minutes.
  5. Serve over rice.

Cooking time (duration): 15

Diet (other): Reduced fat, Reduced carbohydrate

Number of servings (yield): 6

Meal type: dinner
